Mojito in an ice cream bar anyone? Um, yes, please! One of my favorite cocktails out there is a mojito, it just screams summer to me. The zesty, refreshing, and tropical combination wins for me hands down. 

WHAT IS A MOJITO?

The traditional mojito originates from Cuba and usually consists of the following ingredients: White rum, lime, mint, sugar, and soda water, like this classic mojito recipe. It is thought that the original mojito, a moonshine rum-type drink mixed together with mint, lime, and sugar cane syrup was used for medicinal purposes to curb disease!

Ingredients Overview

I've taken inspiration from the traditional mojito drink and incorporated the flavors of fresh lime, mint, and rum into these creamy homemade popsicles.

  • Lime: this recipe calls for both the juice and zest from fresh limes. I highly recommend using fresh lime for this recipe. The lime flavor really comes through in these popsicles so the fresher the better!
  • Mint leaves: just like the original cocktail, we're using fresh mint leaves here. Not only do they give the ice lollies a delicious mint flavor but they also work as a natural food coloring!
  • Avocado: this adds a creamy consistency as well as a boost of color to these ice cream bars. Not to mention some healthy fats too!
  • Coconut yogurt: I love using yogurt in popsicle recipes as it adds a little bit of tang.
  • Coconut cream: the creaminess of these ice cream bars comes from coconut cream. You can also use canned full-fat coconut milk in its place. 
  • Pure maple syrup: to keep these ice lollies a little on the healthier side I've sweetened them with maple syrup in place of cane sugar. 
  • White rum: This is what makes these otherwise lime mint popsicles into mojito popsicles! Of course, you can add a little rum extract to taste if you prefer.

How to make homemade popsicles

Homemade popsicles are one of the easiest recipes to make (so much so that I often resist putting them on the blog!). All you need are something similar to these popsicle molds and the world of flavors is yours to dabble in!   1. Add all of the ingredients apart from the coconut cream to your blender and blend until smooth. Lastly, add in the coconut cream and blend again to combine. I suggest adding the coconut cream last as you don't want to over-blend and risk splitting it.
  2. Pour the mixture into the ice cream molds and insert wooden sticks into each cavity. Freeze for at least 5 hours or until completely set.
  3. To remove the popsicles from their molds run them under some warm water for a couple of seconds and they should release easily when you push them out.

Frequently asked questions

How long do homemade popsicles last in the freezer?

These vegan mojito popsicles will last up to a month in an airtight container (if they don't disappear sooner that is!). 

Can I make them alcohol-free? 

Yes! You can very easily make these into virgin mojito popsicles by skipping the rum. The mint and lime flavors in particular shine through in this recipe and it will still be delicious without the alcohol!

Description

Have your cocktail in the form of these refreshing vegan Mojito Popsicles! They are easy to make and can be made kid-friendly if you leave out the rum. Perfect for cooling down during summer!

Ingredients

  • 2 tablespoons (30 g) lime zest
  • ½ cup (118 ml) lime juice, freshly squeezed, approx 5-6 limes
  • cup (15 g) fresh mint leaves
  • 1 large (200 g) avocado
  • 3.5 oz (100 g) coconut yoghurt, sub with coconut cream/milk
  • 5 tablespoons (75 ml) pure maple syrup
  • 3 tablespoons (45 ml) white rum, optional
  • 7 oz (200 g) coconut cream, or full fat canned coconut milk

Instructions
